Baking On My Mind

What is it about this time of year that makes you want to pull out an apron, crank up the oven and fill your senses with baking aroma? Don't know the answer to that but it has happened to me... does every year!!

I am making Double-Chocolate Cookies!! I mean, what is better than chocolate and then to have it doubled!! Hoop-de-do!

It's easy-peasy, too. The recipe is below.

I am surprised there are any left on the plate! I do love chocolate!

To tell you the truth, I haven't decorated for Christmas yet. I don't believe in doing that until Thanksgiving is over. I mean, let the turkey have his day! The photo is from last year. Yes, I made them then, too.

                                                            Double-Chocolate Cookies

   1 devils food cake mix (with pudding)                                1/2 cup vegetable oil
   1 cup (6 oz) semisweet chocolate morsels                           2 eggs

Combine the cake mix, veggie oil and eggs. Beat a medium speed until blended. Stir in the chocolate morsels. Drop dough by rounded teaspoonfuls about 2" apart onto ungreased cookie sheets.
Bake at 350 degrees for 10 minutes. Cool on cookie sheet for 5 minutes. Remove cookies to wire racks to cool completely. Sprinkle with confectioners sugar.

Makes 3 dozen.

I make 'the best chocolate chunk cookies' (recipes name) with huge hunks of chocolate very little dough, ye-yum. the recipe is from a 1981 Gourmet magazine and I get requests regularly for them. Maybe it is the TG soon Christmas stuff that drives us mindlessly to the kitchen to bake goodies .-).

  5. Oh my goodness...I don't remember them from last year. They look so good. I think my family would love them...they all are big time chocolate lovers.

    Latane, didn't you get a big Kitchen Aid mixer last year. I was wondering how you like it and if you use it quite a bit?

  6. Sounds tasty! I hardly bake at all because I'm allergic to wheat and have to limit sweets. There are substitutes but they really aren't worth the effort.

  7. Oh yum!!!! And your house is always so wonderfully decorated...can't wait to see pics of this year too. I still have my scarecrow out front and the "harvest" wreath on the door. Gotta do something about that! C. and I are going to make a paper machier (sp?) snowman for my front yard, since the chance of snow here is pretty slim. :-) Yvonne's pumpkin spice cake at Thanksgiving by the way was DELICIOUS!!!!
