Hungry for Chicken Salad

I am just sitting here thinking about going down to a new place to eat. I hear they have a great chicken salad sandwich and I just haven't found a place like that around here, YET.

                                                         Maybe today is the day!!

Do you like chicken salad? What do you put in yours? I like the cranberries and nuts with plenty of mayo. And, add some lettuce, please. Toast the bread, too.

The name of this place is Simply Susan's Bakery and CafĂ©.  It is just down the street from The Plaid Turnip.... don't you just love the names of these places. So intriguing that it pulls you in, sits you down and feeds you.

Oh, shoot... what am I doing sitting here? All this talk about chicken salad has made me hungry!! Simply Susan's here I come.

  3. I just made some, Sweetpea! This time I used a Sam's chicken, with chopped apples, celery, boiled eggs, homemade sweet pickles (there's just something about bought sweets and pickle relish that's just OFF, to me), plus I sprinkle the chopped chicken in the bowl with a little of the pickle juice to perk it up while I chop everything else. A good clop of Duke's mayo, a couple teaspoons of (don't laugh) powdered sugar, and add pecans, craisins, and/or a big sprinkle of curry powder at will. I mince everything for tea sandwiches, and a medium chop for croissants or serving on a lettuce leaf.

    We've made pickup loads of this, and it was our most requested dish at the parties we catered for about 30 years. And even after, when Caro managed a deli down South, she'd make it two days a week with the rotisserie chickens, and there would be a line waiting at 9 a.m., with the late-comers getting huffy cause it was all gone. Isn't that a funny memory?

  4. Well thanks a lot...now I have a hankering for chicken salad!! I make mine with lots of grapes, mayo, sweet salad cubes, eggs, chicken and a touch of sugar....mmmmmmm...don't mince mine...I like it chunky....like me!!!...:)

  5. I had a chicken salad sandwich for lunch, along with some potato soup, at the Lenten Luncheon at church today. Yum yum! I have a wonderful chicken salad recipe I will email you, if you like.

  8. Remembered your post and made some today. Included dried cranberries, black walnuts and green onions and of course mayo. Dan called it delicious! Snowed in here.

  9. Mmmm, I've some cooked chicken in the freezer. Going to have to defrost some, now that you gave me a hankerin' for some, too. I like a splash of toasted sesame oil, a splash of soy sauce, some grapes and toasted almonds....and of course some Dukes to bind it all together. Yum
